The Denver steak a heavily marbled, and flavorful beef cut taken from the under blade of the cow’s chuck (shoulder) primal. It takes a skilled butcher to find a Denver. The cut has to be carefully separated from the surrounding chuck muscles, which is why you almost never see it at the grocery store.
Cooked Best suited for high-heat cooking like pan-searing in a cast-iron skillet or grilling, Let the meat rest for 5 to 10 minutes, then slice against the grain to maximize its tenderness.
